It’s fall, and if you’re into fall flavors, pumpkin everything just might be on your list! Find a friend or family member to bake (or share) this yummy pumpkin bread with. The sugar in this quick bread contributes to its color (browning of the crust), how moist it is, and the texture of the bread in addition to balancing the flavor of the pumpkin.

Ingredients:

  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 3 eggs
  • 3 cup flour (optional ½ wheat)
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 3/4 teaspoon ground cloves
  • 1 1/2 teaspoon ground nutmeg
  • 1 15 ounce can of pumpkin
  • cinnamon and sugar mixture for dusting

Directions:

  1. Preheat oven to 350 and grease two 9×5 loaf pans.
  2. In a mixing bowl, cream butter and sugar.
  3. Add applesauce and eggs; mix well.
  4. Combine dry ingredients; stir into creamed mixture just until moistened.
  5. Stir in pumpkin.
  6. Pour mixture into greased loaf pans. Sprinkle tops with cinnamon and sugar mixture.

Bake for 1 hour or until bread tests done.
